Cabbage and Radish Slaw with Peanut Butter Dressing


  1. 1 small green cabbage, finely shredded
  2. 1 medium daikon radish, cut into matchsticks
  3. About 16 red radishes, halved lengthwise and cut into thin half-moons
  4. 4 scallions cut on the diagonal into long, thin slices
  5. ¾ cup dry roasted peanuts, coarsely chopped, divided
  6. ½ cup natural creamy peanut butter
  7. ½ cup warm water
  8. ¼ cup fresh lime juice (2 limes)
  9. 1 tablespoon soy sauce
  10. 4 teaspoons sugar
  11. ½ cup dry roasted peanuts, chopped

  1. Combine cabbage, daikon radish, red radishes, scallions, and ½ cup of peanuts in a large serving bowl.
  2. Toss together and set aside. In a medium bowl, whisk together peanut butter and water until smooth.
  3. Whisk in lime juice, soy sauce, and sugar. Add the remaining ¼ cup of peanuts and mix well.
  4. Just before serving: toss slaw with about ½ of the dressing and serve with remaining dressing alongside.
