Cabbage and Radish Slaw with Peanut Butter Dressing
Ingredients
- 1 small green cabbage, finely shredded
- 1 medium daikon radish, cut into matchsticks
- About 16 red radishes, halved lengthwise and cut into thin half-moons
- 4 scallions cut on the diagonal into long, thin slices
- ¾ cup dry roasted peanuts, coarsely chopped, divided
- ½ cup natural creamy peanut butter
- ½ cup warm water
- ¼ cup fresh lime juice (2 limes)
- 1 tablespoon soy sauce
- 4 teaspoons sugar
- ½ cup dry roasted peanuts, chopped
- Combine cabbage, daikon radish, red radishes, scallions, and ½ cup of peanuts in a large serving bowl.
- Toss together and set aside. In a medium bowl, whisk together peanut butter and water until smooth.
- Whisk in lime juice, soy sauce, and sugar. Add the remaining ¼ cup of peanuts and mix well.
- Just before serving: toss slaw with about ½ of the dressing and serve with remaining dressing alongside.
