Easy Peanut Butter Cup Bark


  1. 1 ½ cup good quality white chocolate chips, divided
  2. 2/3 cup smooth peanut butter
  3. 12 ounces good quality dark chocolate chips
  4. 2/3 cup salted, dry roasted peanuts

Line a baking sheet with foil, leaving a bit of overhang at the edge. Combine one cup of the white chocolate with the peanut butter in a microwave safe bowl. Melt at 50% power in 30 second intervals, until completely smooth, stopping to stir together well between each interval. Using the same technique in a separate bowl, melt the dark chocolate until smooth. Pour the dark chocolate onto the foil and spread into an even layer. Drizzle the peanut butter white chocolate on top and use the end of a butter knife to swirl it into the bottom layer. Sprinkle the roasted peanuts over the top and press them gently into the bark. Melt the remaining half cup of white chocolate and drizzle over the top. Place baking sheet in the refrigerator until completely firm, at least two hours. Break into pieces to serve.
