Grilled Peach Lemonade with Seltzer

4 ripe peaches
2 lb. fresh lemons
1/4 cup dark brown sugar 1 tsp vanilla

6 cups water
1 cup sugar
1 bottle Lemon Polar Seltzer


Preheat gas grill or stoveā€“top to medium high heat. Wash peaches. Cut them in quarters. In a medium size bowl, add peaches, 1/4 cup dark brown sugar, and vanilla. Stir well to coat peaches and set aside. Juice the lemons so that you have about 2 cups of lemon juice. Pour lemon juice into a large pitcher and add 6 cups of water and 1 cup of sugar. Stir to combine and dissolve the sugar. Set aside. Place the peach quarters skin-side down on the hot grill and cook for 3 minutes. Using a tongs, turn the peaches and grill another 3 minutes. Remove peaches from grill. Grind to a smooth pulp in a blender or food processor. Add the pulp to the lemonade mixture to taste and stir to combine. Serve over ice, or chill in the refrigerator until serving. Fill glass 2/3 with lemonade and 1/3 with seltzer. Garnish with mint leaves, sliced peaches and/or lemons.
