Mango Salsa

1 ripe mango, peeled and diced​​​​​​​​
1/4 purple onion, finely diced​​​​​​​​
1 jalapeño, seeded and minced​​​​​​​​
1 small bunch cilantro, washed and coarsely chopped​​​​​​​​
Juice from one lime​​​​​​​​
Splash red wine vinegar ​​​​​​​​
Salt and pepper​​​​​​​​
Combine everything in a large bowl, juice lime over, hit with a tiny splash of vinegar and salt and pepper to taste. If you prefer your salsa spicy: keep some or all seeds in the jalapeño. ​​​​​​​​
Scoop up with chips or spoon over roast fish, shrimp, chicken or fish tacos.
