
INGREDIENTS
1 ripe mango, peeled and diced
1/4 purple onion, finely diced
1 jalapeño, seeded and minced
1 small bunch cilantro, washed and coarsely chopped
Juice from one lime
Splash red wine vinegar
Salt and pepper
DIRECTIONS
Combine everything in a large bowl, juice lime over, hit with a tiny splash of vinegar and salt and pepper to taste. If you prefer your salsa spicy: keep some or all seeds in the jalapeño.
Scoop up with chips or spoon over roast fish, shrimp, chicken or fish tacos.
