Maple Glazed Peanuts and Bacon

Ingredients

  1. 3 slices thick-cut bacon
  2. 1 tablespoon thyme leaves, minced
  3. 1 tablespoon kosher salt
  4. ¾ teaspoon Old Bay seasoning
  5. ½ teaspoon cayenne pepper
  6. ½ teaspoon dry mustard
  7. 3 cups unsalted, roasted peanuts
  8. ½ cup pure maple syrup

  1. Preheat oven to 325. Line a large baking sheet with parchment paper.
  2. In a heavy skillet over medium heat, cook bacon until crisp. Transfer to paper towels to drain, let cool and finely chop.
  3. . In a large bowl, mix together the thyme, salt, Old Bay, cayenne and dry mustard. Add the peanuts, bacon and maple syrup and toss together well to combine.
  4. Spread the nuts onto the prepared baking sheet and roast about 30 minutes, stirring occasionally, until the maple syrup has thickened.
  5. Let the peanuts cool completely, break up any large clumps with your hands if necessary. Serve or store in an airtight container for up to 5 days.
