One container cherry tomatoes, washed and halved
1/4 purple onion (or one small shallot), finely diced
Red wine vinegar
Salt and pepper, to taste
Combine cut tomatoes and their juices with onion in a medium bowl. Drizzle with a small bit of red wine vinegar and a generous splash of olive oil. Salt and pepper to taste and let sit at room temperature while you prepare the rest of your meal so that the flavors will meld and the onion will mellow.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Spoon over everything. Add fresh herbs if you have ’em, this type of recipe is almost infinitely riffable.
