Ingredients
- 4 cups good quality milk chocolate, chips or chopped pieces
- 1 1/2 cups roasted, salted cashews
- 1 1/2 cups chopped regular pretzels, chopped into small pieces
- 1 cup raisins
- 3 cups good quality dark chocolate, chips or chopped pieces
- 1 tablespoon unsalted butter
- 1 teaspoon sea salt
Line a 13x9x2” baking dish with aluminum foil or parchment, leaving an overhang of excess foil or paper (like a handle) on either side. Using a microwave or double boiler, melt the milk chocolate until smooth and stir in the cashews, pretzels and raisins. Pour the mixture into the prepared pan, spreading into an even layer, and refrigerate for one hour to firm.
Using a double boiler or microwave, melt the dark chocolate with the butter until smooth. Remove the hardened milk chocolate out of the fridge and pour the melted dark chocolate on top, spreading into an even layer. Sprinkle the top lightly with flaky sea salt and set back into the fridge to chill for a few more hours. Once completely firm, cut into 1” square pieces. Yields: about 32 mini squares.
