Onion Jam


  1. 2 tablespoons extra virgin olive oil
  2. 2 cups finely chipped red onion
  3. 2 cloves garlic, chopped
  4. 1 tablespoon whole grain mustard
  5. 1 teaspoon Worcestershire sauce
  6. 1 tablespoon brown sugar
  7. ¼ cup balsamic vinegar
  8. Salt and freshly ground black pepper
  9. Extra virgin olive oil

  1. Heat oil in a small saucepan over medium heat. Add onions and sauté until translucent, about 8 minutes.
  2. Add garlic and cook 1 minute more. Stir in mustard, Worcestershire sauce, sugar, and Vinegar and cook for 3-5 more minutes.
  3. Remove from heat and let cool. Serve with crackers and sharp cheddar cheese; or, spread on sandwiches.
