Ingredients
- 1/4 small red onion, very thinly sliced
- 2 ripe peaches, pitted, quartered and very thinly sliced
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon cayenne pepper
- 2 tablespoons chopped fresh parsley
- Coarse salt and freshly ground black pepper
In a small bowl of ice water, soak sliced onions for 10 minutes to mellow out their taste. Blot dry on paper towels, and return to bowl. Add the peaches, honey, lemon juice, cayenne, and parsley. Season with salt and pepper. Let stand 15 minutes for flavors to meld. Serve with grilled fish or chicken.
