Pesche alla Piemontese (Baked Peaches)


  1. 4 tablespoons unsalted butter, divided
  2. 4 peaches (as ripe as you can find)
  3. 1/4 cups sugar
  4. 8 ginger cookies, e.g. Anna's
  5. 2 teaspoons almond extract

Preheat the oven to 350. Use one tablespoon of the butter to grease an ovenproof baking dish. Halve and pit the peaches and place cut side up in the dish. In a small bowl, crumble the ginger cookies and mix with the sugar. Divide this mixture among the peaches and dot each peach with butter. Drizzle the almond extract over the top and bake 45-50 minutes.

Serve warm, with lightly sweetened whipped cream or vanilla ice cream. Yields: 8 small servings, depending on the size of your peaches.
