Roasted Strawberries & Rhubarb

1 lb strawberries, washed and halved
3-4 stalks rhubarb, cut into bite sized pieces
3 tbsp orange juice
3-4 heaping tbsp powdered sugar*


Line a baking sheet with parchment paper. Toss cut fruit with juice and powdered sugar. Roast at 350 until soft and juicy (about 20-30 min).

The end result is somewhere between a compote and a loose jam and if you spoon it over vanilla ice cream it might just change your life.

*You could absolutely use a different sweetener but powdered sugar is the best due to the slight bit of cornstarch content which helps the end product be a little thicker and less soupy than it might be otherwise. If your strawberries are super sweet you can cut the amount a bit.
