Ingredients
- 1 cup granulated sugar
- 2 tablespoons water
- 3/4 cup heavy cream
- 4 tablespoons unsalted butter
- 1 teaspoon crushed sea salt
In a heavy saucepan, combine the sugar and water over low heat until the sugar dissolves. Increase the heat to medium and bring to a boil, without stirring. Boil until the syrup is a deep amber color, about 5 to 6 minutes. While the sugar is caramelizing, warm the cream in a small saucepan. Remove the melted sugar from heat and carefully whisk in the heavy cream little by little. The mixture will bubble up, so be very careful, but stir continuously, adding the butter and salt. To serve: use as a sauce for ice cream, or drizzle a bit over a simple chocolate or vanilla cake.
