Simple Pico de Gallo


INGREDIENTS

3-4 ripe tomatoes
1 small onion, diced
1 bunch cilantro, washed and chopped
1 Jalapeno, minced (optional)
Juice from one lime
Drizzle olive oil
Salt and pepper to taste

DIRECTIONS

Dice tomatoes and transfer chopped fruit and all accumulated juices to bowl, add onion, cilantro, jalapeno (if using). Squeeze lime over, add a drizzle of olive oil, salt and pepper to taste. Leave at room temperature for a bit to allow the flavors to meld; then store covered in the fridge for up to 3 days (f it lasts that long). Don’t feel like doing dishes?
