Snowpea & Apple Salad


1 small bag snow peas, washed, trimmed and chopped into bite-size pieces
1 honeycrisp or pink lady apple, cut into matchsticks
1/4 cup toasted, chopped nuts of your choice. We used pistachios but walnuts, almonds or even pepitas would work


Dress with 2-3 tbsp olive oil, 1 tbsp red wine vinegar and one tsp each Dijon and honey. Salt and pepper to taste.

Crisp, crunchy, Spring-y perfection. Add a protein or some good bread and it’s a full meal.
