Spicy Peanut Cole Slaw


  1. 2 lbs. green cabbage, quartered, cored, shredded
  2. 1 lb. red cabbage, quartered, cored, shredded
  3. 2 carrots, peeled, grated
  4. 1 red bell pepper, quartered, seeded, thinly sliced
  5. 1 medium sized shallot, thinly sliced
  6. ½ cup finely chopped red onion
  7. 1 tart green apple (such as Granny Smith), cored, grated
  8. 1 clove garlic, minced
  9. 1 cup mayonnaise
  10. ¼ cup sour cream
  11. ¼ cup brown sugar
  12. 1 teaspoon Tabasco sauce
  13. 2 tablespoons lemon juice
  14. 1 tablespoon cider vinegar
  15. 2 cups toasted peanuts, chopped

Combine the first 8 ingredients together in a large bowl. In a medium-sized bowl whisk the mayonnaise together with the sour cream, brown sugar, Tabasco, lemon juice and vinegar. Taste and add additional lemon juice or Tabasco if necessary. Sprinkle 1 ½ cups peanuts to the vegetables and add about 2/3 of your dressing. Toss well to coat and season with salt and pepper. Add additional dressing if desired, cover and refrigerate until ready to serve. Just before serving, garnish with remaining ½ cup of chopped nuts.
