Sugar and Spice Nuts


  1. 1/4 cup sugar
  2. 1 tablespoon kosher salt
  3. 1 tablespoon chili powder
  4. 2 teaspoons cinnamon
  5. 2 teaspoons cayenne pepper
  6. 1 1/2 large egg whites
  7. 2 cups raw cashews
  8. 2 cups raw almonds

Preheat the oven to 300°. Coat a rimmed baking sheet with nonstick cooking spray. In a small bowl, whisk the sugar with the salt, chili powder, cinnamon and cayenne pepper. In a large bowl, beat the egg white into stiff peaks. Add the cashews, almonds and spiced sugar and toss. Spread out the nuts on the prepared baking sheet and bake for about 35 minutes, stirring every 10 minutes, until browned. Let cool and serve. Yields: 5 cups.
