Vietnamese Peach Relish


  1. 1 garlic clove, minced
  2. 1 jalapeño pepper, seeded and minced
  3. 2 tablespoons light brown sugar
  4. 3 tablespoons Asian fish sauce
  5. 2 tablespoons fresh lime juice
  6. 4 firm, ripe medium peaches, peeled and finely diced
  7. 1/4 cup chopped cilantro
  8. 2 tablespoons chopped mint

Using a mini food processor process the garlic, jalapeño pepper, and the brown sugar until a paste forms. Stir in the fish sauce, lime juice and 2 tablespoons of water. Transfer the mixture to a medium bowl and fold in the peaches, cilantro and mint. Serve with grilled halibut, grilled shrimp or chicken.

Yields: approximately 1 ½ cups
