White Chocolate Pistachio Bark


  1. 1 lb. good quality white chocolate, chopped
  2. 1 3/4 cups puffed rice cereal
  3. 1 cup shelled, toasted, salted pistachios

In a microwave-safe bowl, melt the chocolate at 50% power in 30 second intervals until smooth, stirring thoroughly between each interval. Immediately fold in the rice cereal. Use a spatula to spread onto a parchment paper lined baking sheet. Sprinkle the pistachios over the top and press gently to adhere. Chill until firm, at least 30 minutes. Break into pieces before serving.
